4 Cheese Antipasti Burger

Four types of cheese, romaine lettuce, tomatoes and banana peppers top these tasty burgers.
Ingredients
- Bun mixture:
- 4 tablespoons extra virgin olive oil
- 2 tablespoons fresh basil, chopped
- Burgers:
- 2 1/2 lbs ground beef
- 2 tablespoons grated Parmesan cheese
- 2 tablespoons grated Romano cheese
- 1 teaspoon minced garlic
- 1 teaspoon chopped cilantro
- 2 eggs, beaten slightly
- 1 1/2 cups Italian bread crumbs
- Salt and pepper to taste
- Cheese mixture:
- 1/2 cup asiago cheese, grated
- 1/2 cup ricotta cheese
- 1/2 cup Romano cheese, grated
- Other:
- 6 Kaiser buns
- 6 slices whole milk mozzarella cheese
- Sandwich:
- 3 cups romaine lettuce, washed dried and torn into bite sized pieces
- 4 medium tomatoes, thinly slice
- 2 banana peppers, seeded and chopped

Method
Wipe grill with a vegetable oil and heat to medium. Whisk together olive oil and basil in a small mixing bowl, until well blended then set aside. In a medium mixing bowl, combine all burger ingredients and blend well. Shape into 6 round patties. Grill burgers over medium heat 10-15 minutes or until meat is no longer pink, turning once. When burgers are almost done place mozzarella cheese on burgers. Set Kaiser buns, flat side down, on grill until golden brown. Meanwhile prepare cheese mixture in a medium mixing bowl, gently combining cheeses, and set aside. Set Kaiser buns on 6 plates and brush olive oil and basil mixture evenly on flat sides. Divide salad greens, tomato slices and banana peppers then place on buns. Place patties on buns, cut horizontally, and remove top part of burger. Spoon cheese mixture on each burger, spoon on more cheese, and close sandwich. Add salt and ground pepper to taste.
Notes: 30 minutes to prepare.
