Angela's Chimichangas


These chimichangas use flour tortillas with a filling containing ground beef, chilies, taco seasoning, tomato sauce, refried beans and cheddar cheese.



Ingredients:

  • 2 lbs ground beef  
  • 1 pkg. Old El Paso taco seasoning mix
  • 1 small can chopped green chilies
  • 15 oz. can Contadina tomato sauce
  • 1 pkg. large flour tortillas  
  • Cooking oil  
  • 1 can refried beans  
  • 16 oz. pkg. shredded Cheddar cheese  
  • Old El Paso Taco Sauce
  • 1 head lettuce, shredded  
  • 1 large tomato, chopped            
  • Sour cream  
  • Calavo brand avocado/guacamole dip  

Method

Brown ground beef until done. Add taco seasoning, green chilies, and tomato sauce. Let simmer about 10 minutes. While meat is simmering, lightly brush tortillas with cooking oil and place in a 200 degree oven about 5 minutes. When meat and tortillas are done, carefully spoon a layer of meat approximately 3/4 of an inch wide into the tortilla. Next to the meat spoon a layer of refried beans. (The length of the layers should be an inch away from the edge of the tortilla for neat folding.) Sprinkle these two ingredients with some of the cheddar cheese and top with a little taco sauce. Fold as you would a burrito--Start with one side and fold it over the ingredients, fold in the ends over the first fold and then fold final piece over that. Fry the chimichanga in oil until the shell is a light golden brown. Place in a baking dish and sprinkle with some of the cheese. Place in the oven until the cheese melts. Garnish with lettuce, tomato, sour cream, guacamole, and taco sauce. Enjoy!!

Notes: This is a family favorite. I have been preparing this meal for my family since I was a teenager, and now prepare it for my own family.
