Asian Style Stir-Fried Beef Sandwiches (Bunh Minh)

Beef strips are marinated in ginger, garlic, chili powder, shallots, fish sauce, soy sauce, sesame oil, lemon and lime juice and hoisin sauce.
 

Ingredients

  • Beef for Sandwiches:
  • 1 pound beef sandwich steaks, cut in strips
  • 2 teaspoons finely chopped fresh ginger
  • 6 cloves garlic, crushed
  • 1 chili pepper, seeded & chopped
  • 1/2 cup chopped shallots
  • 1/4 teaspoon Asian fish sauce
  • 3 Tablespoons soy sauce
  • 1 teaspoon toasted sesame oil
  • Juice of 1 lemon
  • Juice of 1 lime
  • 1/4 cup hoisin sauce
  • 1 Tablespoon (unsalted) butter
  • 1 Tablespoon toasted sesame oil
  • 6 French rolls
  • Parsley sprigs or cilantro sprigs, for those who like it.
  • Cucumber Pickle:
  • 1/4 cup white sugar
  • 1 teaspoon salt
  • 1/2 cup rice vinegar, warmed
  • 2 cucumbers, peeled, seeded, and cut in thin strips
  • 2 carrot, peeled and cut in thin strips
  • 1 cup zucchini and/or yellow summer squash, cut in thin strips
  • 2 scallions, the white bulb and 2 inches of the green part, sliced
  • 3 small chili peppers, seeded & finely chopped
  • 2 Tablespoons chopped peanuts

Method

Beef: Marinate the beef strips in a mixture of the ginger, garlic, chili pepper, shallots, fish sauce, soy sauce, sesame oil, lemon juice, lime juice, and hoisin sauce, about one-half hour in refrigerator. When ready to cook, stir-fry the beef and marinade in butter and the 1 tbsp. sesame oil. Stir beef constantly, allow most of the moisture to evaporate until the meat is thoroughly cooked and the liquid becomes a thick sauce. When ready to serve, cut the French rolls about 2/3 of the way through, hot dog style. Layer the cucumber pickle with the meat strips in the French rolls. Garnish with parsley or cilantro sprigs. Cucumber Pickle: Dissolve the sugar and salt in the rice vinegar. Allow to cool. Put the cucumber, carrot, zucchini and yellow squash strips, scallions, chili peppers, and peanuts in a small bowl. Cover and refrigerate.

 

Notes: This is my version of an Asian street sandwich called "Bunh Minh," in which some of the ingredients are stir-fried.
