This meal-in-a-skillet has ground beef patties topped with onion & cheese, and simmered with potatoes & carrots in a tomato sauce-milk "gravy."
 

Ingredients

  • 1 1/2 lbs ground beef
  • 4 medium potatoes
  • 6 carrots
  • 6 onion slices
  • 6 slices Velveeta cheese
  • 15-oz can tomato sauce
  • 12-oz. can evaporated milk
 
Method

Divide ground beef into 6 patties and brown in a large skillet. While patties are browning, peel potatoes and carrots. Cut potatoes into quarters and carrots into two-inch pieces. Once ground beef patties are cooked, leave in skillet, and place a slice of onion and a slice of cheese on top of each patty, then secure with a toothpick. Add potatoes and carrots to skillet. Mix tomato sauce and milk together, then pour over contents of skillet. Simmer one hour or until carrots and potatoes are tender. Once cooked, remove burgers and vegetables to a serving container and use the remaining sauce as gravy.

 

Notes: You can use a can of Campbell's tomato soup and a can of milk for the sauce. I changed to tomato sauce because I needed the recipe to be gluten-free. I have also substituted American cheese slices for Velveeta. The ingredients in this recipe are easily adjusted for fewer or a larger number of servings.
