Bacon Avocado Swiss Angus Burger with Cilantro Onion Chutney


A ground beef mixture with chipotle pepper sauce is formed into patties and grilled, then served in a Kaiser roll with slices of avocado, bacon, and Swiss cheese, plus a sour cream, onion and cilantro sauce.



Ingredients:

  • Chutney
  • 1/2 Cup chopped fresh cilantro
  • 1/2 Cup chopped sweet onion
  • 1/2 tsp fresh minced garlic
  • 1 tsp lemon juice
  • 1/2 tsp salt
  • 1/2 tsp fresh ground pepper
  • 1/2 Cup sour cream
  • 2 lbs lean (Angus) ground beef
  • 1/2 Cup seasoned fine dry bread crumbs
  • 1/2 Cup grated parmesan Cheese
  • 2 cloves garlic, minced
  • 1 1/2 tsp salt
  • 1/2 tsp fresh ground black pepper
  • 1/2 tsp roasted garlic seasoning
  • 2 Tbsp bottled chipotle pepper sauce (Tabasco)
  • Vegetable oil for the grill rack
  • 6 slices Swiss cheese
  • 6 1/2-inch thick slices red onion
  • 3 Tbsp extra virgin olive oil
  • 6 large Kaiser Rolls, split
  • 6 large leaves butter lettuce
  • 6 1/2-inch thick slices of tomato
  • 12 slices of ripe Avocado
  • 12 strips of bacon, crisp-cooked

Method

1. Prepare an open grill for moderate direct-heat cooking. 2. In a food processor place the cilantro, onion, garlic, lemon juice, salt and pepper. Pulse until well combined. Place sour cream in a small bowl and stir until softened. Fold in cilantro-onion mixture. Set aside. 3. In a large mixing bowl combine ground beef, eggs, bread crumbs, parmesan, salt, pepper, garlic seasoning, and chipotle Tabasco. With hands or large spoon gently combine all ingredients. Form into 6, 1/2-inch thick patties. 4. When the grill is ready, brush the grill rack with vegetable oil. Place the patties on the grill, cover and cook until browned on the bottom, about 4 minutes. With a large spatula, turn the patties and cook another 4-5 minutes or until internal temperature reaches 160 degrees. Brush both sides of onion slices with olive oil and place on grill about 5 minutes or until slightly softened, turning once half way through. Remove onions, separate into rings and keep warm. During the last few minutes of grilling, place cheese slices on patties to melt. Place the rolls, cut side down, on the outer edges of the grill to lightly toast. 5. Spread generous portions of chutney sauce on insides of toasted rolls. Layer bottom rolls with a lettuce leaf, the burger, tomato, grilled onion rings, 2 avocado slices and 2 strips of bacon. Top with remaining rolls.
