
A meat mixture with ground beef, garlic, thyme, bread crumbs and chipotle-flavored hot sauce is formed into balls and threaded onto skewers with bacon, then grilled.
Preheat grill to medium-high. Place bamboo skewers in a shallow pan and cover with cold water. Allow to soak for at least 30 minutes.
In a large bowl, combine the next 8 items, being careful not to overwork meat. Form into 24 meatballs which are equal in size.
Run the skewer through the end of one piece of bacon until there is approximately 1/2" of bacon on one side. Push the bacon up the skewer approximately 2". Now take one of the meatballs and push the pointed end of the skewer through the center. Squeeze gently with your hand to elongate slightly. Wrap the bacon around the nearest side of the meatball and run the skewer through it. Push meatballs toward the end of the skewer. Repeat this process until you have 3 bacon-wrapped meatballs on each skewer. Use 2 pieces of bacon, if necessary.
Place skewers on preheated grill and grill for approximately 8 minutes on each side or until desired doneness is reached.

This simple yet delicious recipe is fabulous served with garlic couscous and sliced beef-steak tomatoes. Easy enough for any night of the week or dressy enough for a cookout with company.
