Baked Beef Stew

A hearty beef and vegetable stew that is baked instead of made on the stove.
Ingredients
- 1 14 1/2 oz can diced tomatoes (or substitute tomato paste)
- 1 cup water
- 3 tbsp quick-cooking tapioca
- 2 tsp sugar
- 1 1/2 tsp salt
- 1/2 tsp pepper
- 2 lbs lean beef stew meat
- 4 med. carrots
- 3 med. potatoes
- 2 celery ribs
- 1 med. onion

Method
In a large bowl, combine the tomatoes, water, tapioca, sugar, salt and pepper. Add remaining ingredients; mix well. Pour into a greased 13-in X 9in X 2in. or 3 qt baking dish. Cover and bake at 375 degrees for 1 3/4-2hrs or until meat and veggies are tender. Serve in bowls.
Notes: Substitute or add other veggies as desired.
