
Slices of cooked brain are placed in a pie plate on top of onion, tomato & hard cooked eggs, and covered with a cheese sauce.
Soak brain in salted water for 30 minutes and clean it well. Cook in 1/2 cup water with a little salt. Drain. Cut into thin slices.
Saute onion in 1 tbsp of the butter. Add egg slices and tomato. Remove from heat. In another pan melt remaining butter; stir in flour and heat 1 minute. Stir in milk, salt and pepper. Cook and stir until thickened and bubbly; stir in half of the cheese.
In a pie plate spread a little of the cheesy sauce; top with the tomato, egg and onion mixture and the sliced brain. Pour remaining sauce on top to cover; sprinkle with remaining cheese. Bake at 375 degrees until golden brown. Serve hot.
Notes:
Do not overcook the brain.
