Baked Brain and Eggs


Slices of cooked brain are placed in a pie plate on top of onion, tomato & hard cooked eggs, and covered with a cheese sauce.



Ingredients:

  • 1   lb brains (beef, pork or lamb)
  • 1/2 lb onion, sliced
  • 3   tbsp butter
  • 1/2 lb tomatoes (cut up)
  • 6   eggs hard cooked and sliced
  • 2   tbsp flour
  • 1 1/2 cups milk
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1   cup shredded cheese

Method

Soak brain in salted water for 30 minutes and clean it well. Cook in 1/2 cup water with a little salt. Drain. Cut into thin slices. Saute onion in 1 tbsp of the butter. Add egg slices and tomato. Remove from heat. In another pan melt remaining butter; stir in flour and heat 1 minute. Stir in milk, salt and pepper. Cook and stir until thickened and bubbly; stir in half of the cheese. In a pie plate spread a little of the cheesy sauce; top with the tomato, egg and onion mixture and the sliced brain. Pour remaining sauce on top to cover; sprinkle with remaining cheese. Bake at 375 degrees until golden brown. Serve hot.

Notes: Do not overcook the brain.
