Barleyburger Stew

Ground beef or ground turkey is cooked with onion, celery, and barley in tomato juice and chili powder to make this stew.
 

Ingredients

  • 2 lb. ground beef or turkey
  • 2 Cups chopped onions
  • 1 Cup chopped celery
  • 4 (18 ounces each) cans tomato juice or V-8 juice
  • 2 Cups water
  • 2 tsp. salt
  • 4 to 6 tsp. chili powder
  • 1 tsp. ground black pepper
  • 1 Cup uncooked regular barley

Method

In large soup pot, cook and stir meat and onion until meat is brown and onion is tender. Drain off fat. Stir in remaining ingredients; heat to boiling. Reduce heat; cover and simmer until barley is done, about 1 hour.
