Beef -Vegetable Meal in One

Ground chuck is cooked with plenty of vegetables--onion, celery, green pepper, potatoes, carrots, cabbage, peas, canned tomatoes and okra--in a beef broth mixture.
 

Ingredients

  • 1 yellow onion
  • 3 stalks celery
  • 1 green bell pepper
  • 1 lb. ground chuck
  • 4 red potatoes
  • 3 carrots
  • 1/2 head cabbage
  • 1/2 small bag frozen green peas
  • 1 large can Hunts diced tomatoes
  • 1 small (14 oz.) can Swanson beef broth
  • 2 teaspoons Worchestershire sauce
  • 1 quart water
  • 2 teaspoons salt
  • Black pepper to taste
  • 2 cups (10 oz. pkg.) unbreaded frozen sliced okra

Method

Chop the fresh vegetables. Brown onion, bell pepper and celery in a skillet sprayed with cooking spray. Stir in meat and cook. Drain off fat from mixture; put in large pot. Mix all other ingredients except for okra. Cook over medium heat for 3 hours. Add okra and cook another 20-30 minutes. Serve with cornbread or crackers.

 

Notes: You may substitute elbow macaroni for the okra.
