Beef and Potato Casserole

This casserole is simple to prepare and makes a great meal during a cold winter night.
Ingredients
- 1 lb ground beef
- 1 can cream of mushroom soup
- 1 large tomato
- 2 cups shredded cheddar cheese
- 1 can French fried onions
- 1 bag frozen cubed hashbrowns
- 1 cup milk

Method
Lightly grease casserole dish, add hashbrowns to bottom and around sides of dish. Bake at 350 degrees for 12-15 minutes. Brown ground beef in skillet and drain. Dice tomatoes and add to ground beef. Add 1/2 can French fried onions and 1 cup cheddar cheese and milk to ground beef mixture. Stir together, and after baking hashbrowns, place ground beef mixture into hashbrown lined casserole dish. Sprinkle remaining cheddar cheese on top, cover with foil and bake for 20 minutes at 350 degrees. Uncover, top dish with remaining French fried onions and bake uncovered for an additional 5-8 minutes.
