Beef Curry Packets

Refrigerated biscuit dough provides the pastry for curry, coconut and lime flavored packets of ground beef, carrots and potatoes.
 

Ingredients

  • 2 7.5 ounces cans refrigerated buttermilk biscuits
  • 1 lb ground beef
  • 1/2 white onion, chopped
  • 2 tablespoons green curry paste
  • 14 ounces coconut milk
  • 2 tablespoons brown sugar
  • 2 teaspoons lime juice
  • 1 cup white potato, 1/4 inch diced, and peeled if desired
  • 1 cup carrot, peeled and 1/4 inch diced
  • 1/2 cup cilantro, chopped
 
Method

Brown ground beef with onion. Remove from pan and drain. In the same pan, heat curry paste for a couple minutes, stirring frequently. Add coconut milk, brown sugar and lime juice to curry paste and stir with a whisk until smooth. Add potatoes and carrots then bring to a boil. Reduce heat to simmer, cover, and cook until vegetables are tender, about 20 minutes. Stir frequently, then add reserved ground beef, onions and cilantro. Remove from stove and set aside. Preheat oven to 400 degrees and line two baking sheets with foil, sprayed with a nonstick cooking spray. On a floured surface, roll biscuits to make a 3.5-4 inch circle. Place a tablespoon of filling on half of circle, fold over, and seal by pressing with tines of a fork. Transfer to baking sheet. Repeat with remaining biscuits and filling. Bake 15-20 minutes or golden brown. Serve warm or at room temperature.
