Beef Pepper Steak

Beef top round, cubed, is seasoned with ketchup and soy sauce and cooked with bell peppers, mushrooms and onions, and served over rice.
 

Ingredients

  • 1 lb boneless beef top round steak
  • 1/2 cup water
  • 1/2 cup ketchup
  • 3 Tbsp soy sauce
  • 1/8 tsp ground pepper
  • 1 beef bouillon cube
  • 1 tsp minced garlic
  • 1/2 cup minced onion
  • 2 lg bell peppers, cut into bite-size pieces
  • 1 8 oz box mushrooms, sliced
  • 2 med onions, sliced into rings
  • 1 tsp seasoned salt
  • 1 tsp wondra flour
  • Cooking spray
  • Rice

Method

Cut meat into bite-size pieces, removing fat, and sprinkle with seasoned salt. Spray pan with cooking spray and brown meat, garlic, and minced onion. Add water and beef bouillon cube, let simmer for 30 minutes on low. Add ketchup, soy sauce, ground pepper, and Wondra flour to thicken. Make rice according to package directions. Ten minutes before serving add sliced mushrooms, bell pepper pieces, and onion rings. Serve over rice.

 

Notes: Vegetables should be a little crisp, not limp. You can use red, green, yellow or orange peppers, which ever you like.
