Beef Wellendorf Salad

Beef strips are combined with papaya, apple, onion and strawberries, spooned on spinach, and drizzled with mayo, wine, jelly and orange.
 

Ingredients

  • 1 bag fresh spinach
  • 1 large papaya, diced
  • 2 apples, diced with skin on
  • 1/2 small red onion, slivered
  • 1 cup sliced fresh strawberries
  • 8 oz sirloin steak, grilled medium rare and sliced thin on bias
  • 4 oz crumbled feta cheese
  • 1 cup cashew halves
  • Dressing:
  • 1/2 cup dry red wine
  • 1/2 cup mayonnaise
  • 1/2 cup red raspberry jelly
  • Grated zest of one orange

Method

Prepare steak. Place 1 1/2 cups spinach on 4 salad plates. Mix papaya, apples, onion, strawberries and steak in small bowl and divide equally on each plate on top of spinach. Stir together dressing ingredients. Drizzle on top of each salad. Garnish with cashews and feta cheese.
