
Ground beef and tomato sauce are layered with rice and cheese in this rich, satisfying main dish.
Brown beef; drain. Add tomato sauce, 1 tsp. salt, garlic, onion, and green pepper. Simmer 1-2 minutes. Bring water to a boil, and add rice and remaining salt. Cover let stand for 5 minutes. Blend cottage cheese and softened cream cheese well, add parsley. In a five-quart casserole layer rice, cheese mixture, and meat sauce. Top with cheddar cheese. Bake 30 minutes at 350 degrees.
Notes:
Can be made with all low fat ingredients. Very good!!!!
