This mixture of ground beef, Spanish rice mix, corn and salsa is topped with sour cream, and may be served as is or spooned over crushed chips.
Brown meat and drain fat. Cook rice mix according to package, adding corn during the last few minutes. Pour salsa over meat. Once rice is done, stir rice and meat together; sprinkle cheese over mixture. Cover 1 to 2 minutes until melted, then put a spoonful of sour cream in the middle of the mixture. Serve alone or over corn chips or tortilla chips.
