Bessie's Piquant Cocktail Meatballs

Lean ground beef is mixed with cornflake crumbs, eggs, ketchup, soy sauce and other seasonings, formed into meatballs and baked in a flavorful cranberry-chili sauce mixture.
 

Ingredients

  • Meatballs:
  • 2 shallots, minced
  • 2 large garlic cloves, minced
  • 1 tbsp olive oil
  • 2 lbs ground beef round
  • 1 cup crushed corn flake crumbs
  • 1/3 cup dried parsley leaves
  • 2 eggs
  • 2 tbsp soy sauce
  • 1/3 cup ketchup
  • 1/4 teaspoon black pepper
  • Sauce:
  • 1 1-lb. can cranberry sauce
  • 1 12-oz. bottle chili sauce
  • 1 tbsp lemon juice
  • 1 tbsp dark brown sugar
 
Method

Preheat oven to 350 degrees. Saute garlic and shallots in 1 tbsp olive oil until wilted. In a large bowl, combine garlic, shallots, and remaining meatball ingredients; mix well. Form mixture into small meatballs about the size of a walnut. Place meatballs in a 15x10-inch rectangular pan and set aside. Combine sauce ingredients in a saucepan over medium heat. Stir occasionally until sauce is smooth and cranberry sauce has melted. Pour over meatballs and bake in preheated oven, uncovered, for 30 minutes. Serve in a chafing dish with toothpicks. Makes about 60 meatballs.

 

Notes: I sometimes add a serrano chili pepper to the meatballs for a little more "heat". These are a fantastic party-pleaser that we have made for over 40 years.
