Blackened Burgers with Peanut Butter and Bacon

These large sesame-coated burgers contain soy sauce, sherry and hot pepper. They're grilled and served on buns with peanut butter-honey and bacon.
 

Ingredients

  • Blackened mixture:
  • 3 tablespoons black sesame seeds
  • 3 tablespoons sesame seeds
  • 1/2 teaspoon coarse ground black pepper
  • 1/2 teaspoon kosher salt
  • Burgers:
  • 2 1/2 lbs ground beef
  • 4 tablespoons (1/4 cup) soy sauce
  • 4 tablespoons (1/4 cup) dry sherry
  • 1 egg, slightly beaten
  • 1 1/2 cups plain dry bread crumbs
  • 1/2 teaspoon dried pepper flakes
  • 1 teaspoon Tabasco sauce, or to taste
  • 6 Kaiser or burger buns, split
  • Peanut Butter mixture:
  • 2 cups crunchy peanut butter
  • 1 tablespoon honey
  • 6 slices cooked bacon, crumbled

Method

Wipe grill with vegetable oil; heat to medium. In a shallow dish, stir together all blackened mixture ingredients; set aside. In a large bowl, combine burger ingredients; mix well. Shape mixture into 6 large round patties. Coat burgers on one side with blackened mixture, pressing firmly to make sure mixture stays on burger. Grill burgers over medium heat 10 to 15 minutes, or until the meat is no longer pink, turning once. When burgers are almost done, place buns, flat side down, on grill to toast just until golden brown. While burgers are grilling, make peanut butter mixture: In a small heavy saucepan, heat peanut butter and honey over medium heat stirring constantly to blend well. Spread peanut butter mixture evenly on flat side of buns; sprinkle 6 of the buns with crumbled bacon, add burgers and close sandwich.

 

Notes: You can use more bacon, if desired. This recipe can be doubled. Takes me 30 minutes to prepare.
