Brandy Roast

This roast marinates in brandy, apple juice, soy sauce and brown sugar. Letting this marinate overnight is the best way to do it.
 

Ingredients

  • 1/2 cup brandy
  • 1 tablespoon light brown sugar
  • 1/2 cup apple juice
  • 1 tablespoon soy sauce
  • 3 pounds bottom round roast, trimmed
  • 1 cup fresh parsley for garnish
  • 1/2 cup chopped fresh herbs for garnish
 
Method

In a large bowl, combine brandy, brown sugar, 1/2 cup apple juice and soy sauce. Mix well and add roast. Turn to coat, then cover bowl with plastic wrap and refrigerate for 3 to 4 hours, turning occasionally. Preheat oven to 400 degrees. Remove roast from marinade and discard marinade in bowl. Place roast in a large roasting pan on a roasting rack. Roast for 10 minutes. Reduce heat to 350 degrees and continue to roast until internal temperature registers 150 degrees, about one hour. For well done, cook for 2 to 2 1/2 hours. Place roast on serving platter and let stand for 10 minutes. Skim fat from pan. Place roasting pan over medium heat. Add 1/2 cup apple juice and bring to a boil, scraping up brown bits. Garnish roast with fresh parsley and fresh herbs. Serve warm with pan juices.
