Bubble and Squeak on Toasted English Muffins

Serve this ground beef, potato and vegetable mixture over toasted English muffins for a quick and easy meal.
 

Ingredients

  • 2 tbsp butter or cooking oil
  • 1 cup cooked ground beef
  • 1 cup mashed potatoes
  • 1 cup green vegetables, such as cooked cabbage or green peas
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/8 teaspoon ground black pepper
  • 1/4 teaspoon salt
  • 4 English muffins, split and toasted

Method

In large skillet heat butter or oil. Add meat, potatoes and vegetable. Add garlic and onion powders. Cook for 7 to 10 minutes until contents in skillet began to bubble and squeak; sprinkle with black pepper and salt. Serve over English muffins.

 

Notes: This dish can be accompanied with a dash of Tabasco sauce and some Piccadilly or Indian relish.
