Buffalo-style Beef on Weck Melts

This sandwich uses deli roast beef, dipped in au jus, and Kaiser rolls with a horseradish and mustard mixture and melted Monterey Jack cheese.
 

Ingredients

  • 1 (1-oz) packet au jus gravy mix
  • 2 1/2 cups cold water
  • 1/2 cup dry red wine
  • 1/3 cup sour cream
  • 2 Tablespoons bottled grated horseradish, well drained
  • 2 teaspoons Dijon-style mustard
  • 1 1/2 teaspoons caraway seeds
  • 1 1/2 teaspoons Kosher salt
  • 1 egg
  • 1 teaspoon water
  • 6 Kaiser rolls, split
  • 1/2 pound thinly sliced deli roast beef
  • 6 slices Monterey Jack cheese

Method

Preheat oven to 350 degrees. Empty the au jus gravy mix into a small saucepan. Gradually whisk in the water and wine. Cook over medium heat, stirring frequently, until the gravy comes to a boil. Reduce heat to warm. Combine sour cream, horseradish, and mustard in a small bowl; stir to combine. Set aside. Combine the caraway seeds and coarse salt in a small bowl. In another small bowl, whisk the egg and 1 teaspoon water together to make an egg wash. Separate the roll tops from the bottoms. Place the bottoms, cut side up, and the roll tops, cut side down, on a large baking sheet. Brush roll tops with the egg wash and sprinkle evenly with the caraway seed and salt mixture. Bake until the buns begin to toast and the caraway seeds and salt adhere to the roll tops, about 3 minutes. Remove from the oven. Adjust oven heat to broil. Remove the roll tops from the baking sheet and set aside. Dip each slice of roast beef into the au jus and divide evenly among the roll bottoms. Top the roast beef with the Monterey Jack cheese. Put in the oven and broil until the cheese begins to melt, about two minutes. Put a dollop of sour cream horseradish sauce on top of the melted cheese. Dip the cut side of each roll top in the au jus and place on top of the sandwiches. If desired, serve with the remaining au jus on the side for dipping.

 

Notes: In Buffalo, Beef on Weck is a local specialty that's as popular as the city's renowned chicken wings. The sandwich's trademark is the kimmelweck rolls that have the crunch of caraway seeds and Kosher salt. This is a melt-type sandwich inspired by that local favorite. It's a favorite in our household.
