Calabacitas Steak

This delicious Mexican steak recipe is designed for two but will easily double or triple if you have a larger dinner party.
 

Ingredients

  • Calabacitas:
  • 2 tbsp olive oil
  • 1 garlic clove, minced
  • 1 medium zucchini (6 inch) sliced 1/2 inch
  • 1 tomato, chopped (retaining all liquid)
  • 1 cup frozen sweet corn
  • 1 4 oz can diced green chilies
  • 1/2 tsp dried Mexican oregano (or substitute regular oregano if not available)
  • 2 pinches salt or to taste
  • Steak:
  • 1-2 tbsp olive oil
  • 2 6 oz filet mignon steaks, 3/4 to 1 inch thick
  • 2 tsp fajita seasoning
  • 1-2 twists freshly cracked black pepper or as desired
  • Garnish:
  • Parsley or cilantro sprigs

Method

Calabacitas: Heat olive oil in a large (10 inch) skillet over medium heat. Saute garlic for 30 seconds, stirring frequently. Add zucchini and saute for 10 minutes, stirring occasionally. Add rest of ingredients and simmer over medium low heat for 10 minutes, stirring occasionally until zucchini is cooked but not mushy. Steak: Heat olive oil in a large (10 inch) skillet over medium heat. Sear steaks on both sides. Season with fajita seasoning and cook for 5-7 minutes per side to desired doneness. Top with black pepper, if desired. To assemble this delicious and romantic Southwestern supper, divide Calabacitas in half and spoon into center of plate. Top with steak. Garnish plate with parsley or cilantro sprigs.

 

Notes: This recipe was designed as a romantic dinner for two.
