Carne Adovada Tacos

Beef cubes are marinated in a mixture of chili powder, "hot" paprika, lime juice, beef broth and a little cornstarch. It is served in totillas.
Ingredients
- 2 teaspoons cornstarch
- 3 cups beef stock
- 3/4 cup red chili powder
- 1/4 cup "hot" paprika
- 1/4 cup fresh lime juice
- 4 pounds uncooked beef (such as a roast), cubed
- 16, 10-inch flour tortillas
- 1 cup shredded pepper-jack cheese
- 1 cup finely shredded lettuce
- 1 cup seeded diced tomato
- 1 cup sour cream

Method
In a large non-metal bowl, whisk together cornstarch and beef stock. Add chili powder, paprika, and lime juice; add beef cubes. Cover and chill at least 8 hours or up to 24 hours. Place in slow cooker and cook on low heat setting for 4-6 hours. Shred meat and serve with remaining ingredients to make 16 soft tacos.
Notes: There is little prep and hands-on cooking for such an impressive and delicious meal.
