Layers of tortillas, ground beef, refried beans, and a cheesy enchilada sauce--sure to be a family favorite.
Heat large skillet, add ground beef and finely chopped onion. Season with salt, pepper and chili powder to taste. Remove from heat when beef and onions are thoroughly cooked and set aside. Heat refried beans in pan using medium heat, add milk and stir until creamy, then remove from heat and set aside. In a large casserole pan pour 1/2 inch or so of red sauce. Lay 2 tortillas covering bottom of pan overlapping a little. Spread refried beans sparingly then add 1/4 of beef mixture, then a mixture of cheeses on top. Next pour 1/2 cup red sauce on top. Then start over with tortillas. Repeat above to make 3 layers on the. Then add remaining beef mixture with cheese on top of that (add more for a gooier topping). Lastly pour remaining red sauce over top adding a half cup of green sauce. Bake in oven at 400 degrees uncovered approximately 45 minutes or until bubbling, and cheese starts to turn brown. Cool for 10-15 minutes,
Cut into squares and serve. Toppings you could add; sour cream, tomatoes or hot sauce.
Notes:
You can add as little or as much red sauce and cheese as you would like. It just depends on how gooey you like it.
