Chili with Water Chestnuts

This chili recipe uses water chestnuts, spicy V-8 and just a touch of cinnamon to give it a unique twist. Serve it with cheese and crackers for an easy main dish.
 

Ingredients

  • 3 lbs Ground Chuck
  • 1 Lg can dark red kidney beans
  • 1 Can sliced water chestnuts (chopped)
  • 1 Onion chopped
  • 3 Cloves minced garlic
  • 3 - 4 cans Tomato Soup
  • 1 bottle Spicy V-8 juice
  • 6-8 tsp Chili powder
  • 1 tbsp Crushed red pepper flakes
  • 1 tsp Basil
  • 1/2 tsp Cinnamon (not too much)

Method

Brown ground chuck together with chopped onions and minced garlic. Add kidney beans, chopped water chestnuts, tomato soup, V-8 juice, spices and simmer for 1 or more hours.

 

Notes: Serving options: serve alone or w/ co-jack cheese or oyster crackers
