Chili and meatloaf come together with the help of cornbread to make this hearty dish.
Mix all ingredients together. Shape into one large, two medium, four small, or sixteen mini loaves. The latter is good to put in a 9 x 13 pan as individual mini loaves for potlucks. Bake on a foil covered cookie sheet at 350 degrees until completely cooked, which will depend on the size of the loaves. Remove from pan and place loaves into serving dish. Cover loaves with grated sharp cheddar cheese. Return to oven until cheese melts. Serve hot from the oven.
Notes:
This is a delicious hybrid of chili and meatloaf. The use of corn muffin mix instead of bread crumbs will spark interest again in the normally dull meatloaf.
