
This chili combines ground beef (or turkey) with red kidney beans, onion, stewed tomatoes, and whole kernel corn, plus chopped gherkin pickles.
Brown the ground beef in a large skillet with onion, olive oil and garlic. Drain fat. Transfer to a large pot and gradually add all the other ingredients. This can be cooked quickly on top of the stove in 45 minutes OR simmered for several hours in a crockpot. Serve in bowls, garnished with chopped green onions, shredded cheese and/or sour cream. This recipe fills one large crockpot.
