Colleen's Best Stroganoff


Beef stew meat is cooked in the crock pot along with onion, beef broth, mushrooms, garlic cream of mushroom soup, garlic seasoning, and fresh garlic, then combined with cheddar-jack cheese, cooked noodles, and sour cream. It's turned into a casserole, baked, and topped with mozzarella cheese.



Ingredients:

  • 1 to 1 1/2 lbs. beef stew meat, cut in small cubes
  • 1/2 onion, chopped
  • 1 can beef broth
  • 2 cans condensed garlic cream of mushroom soup
  • 1 soup can of milk
  • 1 sm can mushroom stems and pieces
  • 1 16-oz package of shredded cheddar-jack cheese
  • 1 16-oz package of shredded mozzarella cheese
  • Monterrey Chicken garlic seasoning to taste (about 3 Tbsp.)
  • Pepper, to taste
  • 1 lg. package of egg noodles
  • 1 16-oz carton sour cream
  • 2 tablespoons Minced Garlic
  • Cornstarch for thickening
  • Pam spray

Method

Put beef and onion in crock-pot. In a bowl combine beef broth with garlic cream of mushroom soup. Add can of milk to mixture. In crock-pot season meat with the Monterey chicken garlic seasoning. Add soup and milk mixture. Turn crock-pot on low for about 5 hrs stirring about once an hour. Cook longer, if you can. But I find about 5 hours gets meat really tender. After 4 hours add mushrooms at 5 hour mark add Minced garlic. Preheat oven to 350 degrees. Now put water on to boil and boil noodles according to package directions. Drain; do not rinse. Add noodles to crock-pot. Stir until noodles are mixed well. Now you will know how big of a baking dish you will need. I use my biggest casserole dish. Spray dish with Pam and lid too. Turn crock-pot off and add cheddar-jack cheese and stir. Add container of sour cream; stir well. Pour into casserole. Cover and bake in oven for a half and hour. Uncover and top with as much mozzarella as you like. My family doesn't like me to melt it in the oven, so I let the dish stand for 5-7 minutes and then top with cheese and let stand for 5 minutes. Serve with rolls and a salad.

Notes: This is a great recipe that's sometimes even better the next day.
