Corny Beef Pie Casserole


This popular recipe has a layer of ground beef & onions on the bottom, corn in the middle, plus mashed potatoes & cheddar cheese over the top.



Ingredients:

  • 6-8 baking potatoes
  • 1 tsp salt
  • 1/4 cup butter, cut into chunks
  • 1/4 tsp pepper
  • 1/2 to 1 cup milk
  • 1 lb lean ground beef
  • 1 small onion, chopped
  • 1/2 tsp garlic salt
  • 1 15 oz. can cream-style corn
  • 1/2 of a 16-oz. bag frozen corn
  • 2 cups sharp cheddar cheese

Method

Preheat oven to 350 degrees. Grease a rectangular baking dish with nonstick spray; set aside. Peel and cut potatoes into small chunks. Place in pot and add just enough water to cover. Sprinkle in salt. Bring to a boil and boil for 10-12 minutes, until fork-tender. Drain water from pot. Leave potatoes in pot. Add butter to melt. Add pepper. With mixer, slowly beat in just enough milk to reach desired consistency; set aside. In a skillet cook ground beef and onions until beef is no longer pink. Drain; season with garlic salt. Spoon cooked beef mixture in a layer over bottom of baking dish. Pour creamed corn on top. Sprinkle frozen corn on top of creamed corn. Spoon on potatoes, spreading to cover. Sprinkle cheese on top; place in oven. Bake about 30 minutes to heat through and melt cheese.

Notes: You can use more or less potatoes, just adjust milk and seasoning. Also make a larger portion by adding more corn and beef. A real kid pleaser.
