Cowboy Casserole

A simple casserole with ground chuck, corn, tomatoes and cheese--make ahead and freeze for those busy nights.
 

Ingredients

  • 1 lb ground chuck
  • 1 can whole kernal corn, drained
  • 1 can stewed tomatoes, drained
  • 1 can golden mushroom soup
  • 1/4 cup chopped bell peppers
  • 1/4 cup chopped onions
  • 1 tbsp A-1 sauce
  • 12 slices American cheese
  • Season to taste

Method

Preheat oven to 350 degrees. In a skillet, brown ground chuck, onions and bell peppers. Strain and rinse with hot water. Pour meat mixture in pot, add corn, tomatoes, soup and A-1 sauce then mix well. In a casserole dish, pour meat mixture and spread evenly in pan. On top of mixture lay slices of cheese. Bake about 30 minutes or until brown around edges.

 

Notes: This can be served with garlic toast, and a small salad. Can be made in advance and frozen.
