Cowboy Burgers


Lean ground beef is mixed with taco seasoning mix, onion and cheddar cheese, formed into patties, cooked and served on a bun with tomato and lettuce.



Ingredients:

  • 1 1/4 lb lean ground beef
  • 1 (1 oz) pkg. taco seasoning mix (chipotle or other)
  • 1/4 cup diced red onion
  • 1 cup shredded cheddar cheese
  • 4 hamburger buns (sesame-seed or plain), split and toasted
  • 1/4 cup mayonnaise (or more, to your liking) (light mayonnaise works great for this if you are counting calories)
  • 4 slices tomato
  • 4 lettuce leaves
  • Optional condiments of your choice: catsup, mustard, BBQ sauce, etc.

Method

In a medium bowl, combine ground beef, taco seasoning mix, onion and cheese. Form into 4 large patties. Cook in large skillet, broil or grill to desired doneness. Spread a little mayonnaise on each side of bun, top with a burger, 1 slice tomato, a lettuce leaf and top of bun.

Notes: These are simple and scrumptious. Serve with your favorite condiments-- catsup, mustard, a little barbeque sauce, etc. We like these best with only a little bit of light mayonnaise as the burgers themselves are very zesty and flavorful. Serve with your favorite sides like chips and pickles, baked beans, corn on the cob, etc. You can have these on the table in no time. For a less spicy flavor (such as for kids) substitute regular taco seasoning. This recipe doubles easily for larger groups. Always a crowd pleaser. Variation: Add a little crumbled, cooked bacon to the raw hamburger mixture.
