Creole Enchiladas

This is an easy recipe for flavorful and delicious enchiladas that the family will love.
Ingredients
- 1 package of dirty rice mix
- 1 can kidney beans
- 2 cans enchilada sauce
- 1 bunch green onions cut
- 1 cup cilantro, chopped
- 1 lb hamburger
- 1 package corn tortillas
- 2 cups each of shredded sharp cheddar cheese and mozzarella cheese

Method
Brown hamburger, remove from skillet. Lightly brown tortillas on both sides in a clean and dry skillet until soft and flexible. Prepare rice per instructions. Add hamburger, cilantro, and half of green onions to rice mixture. On tortillas, add 3 tbsp of rice mixture, add a large pinch of both cheeses add 2 tbsp of enchilada sauce and roll tortilla and place edge side down in deep baking dish. Pour remaining enchilada sauce over enchiladas, add remaining cheese on top of enchiladas, add remaining green onions. Bake at 325 degrees for 10-12 minutes.
Notes: This is a quick way to make flavorful enchiladas. Remember to remove corn tortillas from skillet before they get too crispy or they won't roll. Serve with salsa and a salad for a complete meal.
Number of Servings: In large baking dish at least 10-12 enchiladas
