Crockpot Beans and Meatball Stew

A ground beef mixture with eggs, seasoned fine dry bread crumbs, and parmesan cheese is formed into small meatballs, browned, and cooked in a crock pot with canned beans (pork-and-beans, butter beans, chili beans, navy beans and limas), canned tomatoes, onion, green pepper, ketchup and brown sugar.
Ingredients
- 1 lb ground beef
- 2 eggs, beaten
- 1/2 tsp pepper (divided)
- 1 tsp salt (divided)
- 1/4 cup fine dry Italian bread crumbs
- 2 Tbsp milk
- 3/4 cup shredded parmesan cheese
- 3-4 Tbsp olive oil
- 1 tsp minced garlic
- 1 can (15 oz) butter beans, drained
- 1 can (15 oz) chili hot beans, undrained
- 1 can (15 oz) pork'n'beans, undrained
- 1 can (15 oz) lima beans, drained
- 1 can (15 oz) navy beans,drained
- 1 can (15 oz) diced tomatoes
- 1 cup ketchup
- 1 chopped green pepper
- 1 chopped onion
- 1/2 cup packed brown sugar

Method
For meatballs, mix ground beef, eggs, bread crumbs, 1/2 tsp salt, 1/4 tsp pepper, cheese and milk. Shape into small balls; brown in olive oil in skillet. Place onto platter to drain. Meanwhile in large crockpot combine the cans of beans, onion, tomatoes, ketchup, green pepper, garlic, brown sugar, and the remaining salt and pepper. Stir well. Add the meatballs; cook on low heat setting for 5-6 hours, gently stirring occasionally.
Notes: Excellent with cornbread or any hot bread. Smells wonderful cooking all day. Always a big hit at a covered dish dinner.
