Crockpot Braised Flank Steak

To make a great crock pot beef flank steak cook beef in a slow electric cooker with vegetables, condensed beef broth, and a little tomato paste until beef is very tender, then cut flank steak into strips to serve.
 

Ingredients

  • 1 1/2 to 2 pounds of beef flank steak
  • 1 Tbsp. flour
  • 1 Tbsp. oil
  • 1 medium onion, diced
  • 1 medium carrot, diced
  • 1 green pepper, diced
  • 1 can condensed beef broth
  • 1 Tbsp. tomato paste

Method

Cut meat as necessary to fit into crock pot. Rub meat with flour and brown in oil in a heavy skillet. Remove meat and place in crock pot. Add vegetables to skillet and saute about 5 minutes. Stir broth into tomato paste; add to vegetables and bring to boil. Pour vegetable mixture over steak. Cook in crockpot on high heat for 4-6 hours, or low heat for 8-12 hours. Remove meat from pot and slice into thin strips across the grain. Spoon vegetables and sauce over meat and serve.

 

Notes: To make a "gravy," after cooking, pour the vegetables and liquid into a food processor and process until smooth.
