Curried Beef and Vegetable Soup

Curry powder gives this stew an exotic flair and sweet potatoes give it a slightly sweet and nutty taste, plus help thicken the stew.
Ingredients
- 1 pound stew meat cut into 1 inch pieces
- 2 Tablespoons olive oil
- 6 cups beef broth
- 2 onions, chopped
- 2 Tablespoons curry powder
- 1 Tablespoon brown sugar
- 1 teaspoon salt
- 2 medium potatoes, chopped in 1/2 inch cubes
- 2 medium parsnips, chopped in 1/2 inch cubes
- 2 medium carrots, peeled and sliced
- 1 10 oz package frozen peas

Method
In a large, heavy stock pot brown beef in oil over medium high heat, about 8-10 minutes. Add broth and simmer covered for 30 minutes, add remaining ingredients and continue simmering for 45-60 minutes until meat and vegetables are tender.
