Dad's Hamburger Casserole


A quick and easy casserole to feed a growing family--ground beef, with creamed corn and potatoes.



Ingredients:

  • 1 lb lean ground beef, browned but not dry
  • 1 large white onion
  • 2 14 oz cans creamed corn  
  • 4 large russet potatoes, washed and peeled
  • Pinch of salt and pepper
  • 1/2 cup ketchup

Method

Preheat oven to 350 degrees. Brown ground beef and drain. Slice onion and potatoes into 1/8 inch slices leaving rings of onion whole. Layer half of potatoes then onion in a 9x13 inch pan. Sprinkle with salt and pepper. Cover with one can cream corn. Repeat for next layer. Top with ground beef and finally with ketchup. Bake uncovered for approximately 1 1/2 hours until potatoes are soft.

Notes: This recipe is cheap and easy to make. Almost everyone enjoys it, even children. Our large family (9) often enjoyed this meal cooked by our father.
