Method
Heat oven to 300 degrees. Lay ribs flat atop heavy aluminum foil (or use 2 thicknesses of regular foil) making sure foil area is larger than ribs so as to allow crimping of sides later on. Sprinkle generously with chili powder and garlic powder on both sides. Sprinkle top only with seasoned salt, about 2 Tbsp, or to taste. Place another heavy sheet of foil on top; fold and crimp around entire ribs, bringing top and bottom foil together tightly. Place on a cookie sheet with sides and Bake at 300 degrees for at least 3 hours. Remove top foil at just one corner, drain as much grease and liquid from this corner as possible, then remove top foil entirely. Turn oven heat up to 425, brush ribs generously with your favorite BBQ sauce, and bake uncovered until desired darkness or crispness, (usually about 8 minutes). Enjoy with your favorite corn bread!
Notes: This recipe works great with chicken legs or quarters, too. The seasoned salt can also be replaced with about 1 Tbsp of Kosher salt.
Number of Servings: 4 hearty servings
