Danish Casserole

This easy dinner recipe uses turkey, beef or pork meatballs and egg noodles along with red cabbage to make a flavorful casserole.
 

Ingredients

  • Meatballs:
  • 1 1/2 lbs. ground turkey, beef or pork
  • 1 minced medium onion
  • 2 tsp oil
  • 1 tsp. anchovy paste
  • 2 slices of bread, ripped
  • 1/4 cup milk 1/4 tsp allspice
  • 1/4 tsp dried dill
  • salt, pepper to taste
  • Gravy:
  • 1 can beef broth
  • 2-3 Tbs cornstartch or flour
  • Other:
  • 2 jars - sweet and sour red cabbage, undrained.
  • 1 1/2 lb cooked egg noodles
  • 1 tsp caraway seed
  • 1/2 tsp dry dill
  • 3 Tbs butter

Method

Mix meatball ingredients. Shape into 1 1/2" balls. Cook in large pan until done. Remove meatballs and add onion, sauteing until done about 5 minutes. Add cornstarch or flour. Cook for 1 minute. Add broth. Bring to boil, simmer 2 minutes. Add back meatballs. Cover and cook 15 minutes. Cook noodles as directed, add caraway, butter and dill and set aside. Place meatballs in large 5-6 qt Dutch oven. Cover meatballs with jarred sweet sour red cabbage. Cover with noodles. Pour gravy over top. Bake at 350 for 20 minutes covered. Bake uncovered 10 minutes.
