Shoyu sauce and fruit chutney give these moist burgers a Hawaiian island flare. Shoyu is a particular soy sauce, popular in Hawaii.
Preheat broiler. Place sheet of foil over broiler pan. Brush foil lightly with olive oil. Mix all ingredients together and form into 8-10 patties.
Place on foil and broil room temperature patties 2-3 minutes on each side. Turn carefully with solid spatula due to juiciness of burgers.
While burgers are broiling, place buttered and open faced potato rolls in toaster oven and toast for 2-3 minutes until lightly browned. Check burgers for doneness. Place burgers in buns and serve with condiments.
Notes:
My parents moved to Hawaii from Oregon in the late 1930s when Hawaii was still a territory of the United States. My mother worked as a home economics teacher and loved to develop original recipes blending the flavors of the people of Hawaii with those from the continental US. Her inclusion of shoyu and chutney in this recipe makes it unique. Having inherited her love of developing recipes, I added more ketchup and the Lipton soup to deepen the flavors.
