Diablos BBQ Glaze

This Glaze-for-a-Crowd contains 10 pounds of tomato paste, 2 cups of garlic cloves, 2 cups of bourbon and 4 bottles of beer.
 

Ingredients

  • 1 10-lb. can tomato paste
  • 4 onions, quartered
  • 2 cups garlic cloves
  • 1 lb brown sugar
  • 1 tbsp cayenne pepper
  • 2 1/2 cups balsamic vinegar
  • 2 lemons, juiced
  • 2 cups bourbon
  • 2 oz grated fresh ginger
  • 3 jalapenos
  • 1 lb bacon
  • 4 12-oz bottles (Budweiser) beer

Method

Char the onions, bacon and garlic on a barbeque. Add to other ingredients in a very large kettle; bring to a boil. Cover; place in oven at 325 degrees for 2 1/2 hours. Remove, cool and puree in batches in blender. Place in cooler at least 24 hours, and then use as desired.
