
Beef chuck steak is flavored with slivers of garlic, grilled, and served with caramelized onions.
Make enough slits in steak to accommodate inserting a piece of garlic into each. Push garlic deep into steak. Season with salt and pepper.
In a skillet, heat olive oil; add onions. Once it begins to sizzle, add a little sugar to pan to speed up caramelizing, and then cook down until golden brown.
While onions are cooking, place steak on a grill and cook for 7-8 minutes on each side. Once cooking has completed, let meat rest about 5 minutes covered with foil. Serve with onions on top.
Notes:
A good vegetable choice is long, trimmed string beans cooked crisp-tender, and a baked potato with butter and sour cream. Add crusty Italian bread, heated, and serve with a bottle of Chianti.
