Easy Enchilada's

Flour tortillas are filled with a mixture of cooked ground beef and onion, chili seasoning mix, chili powder, and tomato sauce, then rolled up and topped with cheese before baking.
Ingredients
- 1 lb. ground chuck
- 1 medium chopped onion
- 2 large cans diced tomatoes
- 1 package chili mix (I use McCormick's regular chili mix)
- 2-3 Tbs. of chili powder (depends on your taste--I use 2)
- 8 oz. can tomato sauce
- 1 cup water
- 10 flour tortillas
- Salt and pepper to taste
- Shredded medium cheddar cheese.

Method
1. Brown ground chuck and onion until meat is cooked well. Drain. 2. In large saucepan add tomatoes, tomato sauce, water, chili mix, chili powder and meat mixture. Bring to a boil; simmer 15 to 30 minutes. 3. Spray a 13 x 9" pan with non-stick cooking spray. 4. On a large plate place one tortilla and, with a slotted spoon, place 2-3 Tbs of meat-tomato mixture on shell. Add 2-3 Tbs of shredded cheese; roll up mixture in shell and place in pan, seam side down. Continue until all are filled and placed in pan. 6. Pour any remaining sauce over enchiladas in pan. 7. Generously cover enchiladas with shredded cheese. I like a lot! 8. Cover with tinfoil and bake in a 350 degree oven for 30 minutes to 1 hour until it heats all the way through.
Notes: I usually place the pan on a baking sheet covered with tin foil for prevention of food spills in the oven. If you want a little extra spice add some green chilies.
