Easy Leftover Beef Stew

Left over roast beef with fresh vegetables and seasonings makes a wondefully hearty stew.
 

Ingredients

  • 1 pkg frozen vegetable medley
  • 1 cup of red wine
  • 1 package Lipton or Knorr onion soup
  • 1 small onion
  • 3 cloves garlic, chopped
  • Leftover roast beef, diced
  • 1 small bag of frozen carrots
  • 1 can of corn
  • 1-2 cans of diced tomatoes (optional)

Method

Brown garlic and onion in small amount of oil in a stew or soup pot. Add meat and brown (this is an important step as it gives the meat a good texture). Add everything to pot after onions have caramelized. Fill close to top with water so it can cook down. Bring to a boil and then reduce heat and simmer for several hours. Add water as needed; the final stew should be fairly thick. For thicker stew, when close to serving, take about a cup of the liquid and cool. Add cornstarch to produce a thick liquid and stir into the stew. Serve stew over egg noodles.

 

Notes: This is a very tasty and easy way to use leftover beef roast. It stretches the roast into at least one more meal.
