Easy Vegetable Soup

If you don't have bouillon cubes, one teaspoon of bouillon granules will work.
 

Ingredients

  • 1 lb. beef cube steak, cut up
  • 1 medium white onion, chopped
  • 1 large can hot-style vegetable juice
  • 4 large carrots, sliced
  • 1 cup cubed white potatoes
  • 1 beef bouillon cube
  • 1 large can diced tomatoes, undrained
  • 1 can green beens, drained
  • 1 can corn, drained

Method

In a saucepan cook meat and onion until meat is brown and onion is tender. Stir 1/2 cup of the vegetable juice into saucepan, scraping up crusty browned bits. Stir in remaining vegetable juice, along with the carrots, potatoes, and bouillon cube. Simmer, covered, for 30 minutes. Add undrained tomatoes, green beans, and corn. Cook 30 minutes more.

 

Notes: This is how I prepare it for my family, but my mother added diced celery and lima beans also, so it can be modified per family. It?s a quick, easy, very healthy meal that my kids and all their friends even enjoy. Another added bonus is that it keeps well and can even be frozen for ready to eat meals later!
