Easy Enchilada Casserole


This enchilada recipe just layers the corn tortillas with beef, cheese, and an enchilada sauce mixture. No rolling tortillas!



Ingredients:

  • 1-2lb ground beef (or ground poultry)  1 dozen corn tortillas  
  • 1 can mild enchilada sauce  
  • 1 sm can tomato sauce  
  • 2 cups shredded cheese (cheddar, colby jack, or any mixed variety)

Method

Brown the beef, and drain. Mix the tomato sauce and enchilada sauces, and pour a couple of tablespoons into the bottom of a 9X9 baking dish. Place a layer of the tortillas on top of the sauce. Sprinkle 1/4 of the beef on top of the tortillas and then 1/4 of the cheese. Pour 2 tablespoons of the sauce on top. Repeat 3 times and end with a layer of cheese. Bake at 375' for about 15-25 min (until cheese is melted).

Notes: You can double the recipe for a larger pan size, or even make small individual portions using pie pans and layering the tortillas one at a time.
