
This enchilada recipe just layers the corn tortillas with beef, cheese, and an enchilada sauce mixture. No rolling tortillas!
Brown the beef, and drain. Mix the tomato sauce and enchilada sauces, and pour a couple of tablespoons into the bottom of a 9X9 baking dish. Place a layer of the tortillas on top of the sauce. Sprinkle 1/4 of the beef on top of the tortillas and then 1/4 of the cheese. Pour 2 tablespoons of the sauce on top. Repeat 3 times and end with a layer of cheese. Bake at 375' for about 15-25 min (until cheese is melted).
Notes:
You can double the recipe for a larger pan size, or even make small individual portions using pie pans and layering the tortillas one at a time.
