A meatloaf mixture with ground beef, eggs, oat bran cereal, peas and carrots is topped with mashed potatoes, bacon-wrapped asparagus, and Swiss cheese, then baked.

1. Combine all ingredients except mashed potatoes, asparagus, bacon & Swiss cheese. 2. Mix well & place into ungreased casserole. 3. Cover with mashed potatoes 4. Wind a slice of bacon around each asparagus spear 5. Place asparagus spears on top of the mashed potatoes 6. Cover spears with slices of Swiss cheese 7. Bake at 350 degrees F for approximately 90 minutes, or until the juices from the beef run clear, and the top is golden brown.
Lean ground beef, combined with peppers, onions, eggs, and oat bran cereal makes this dish not only delicious, but a healthy choice! Prep:10m Bake:90m
