Emily's Meatloaf


This beef and pork loaf , which also has oatmeal, contains some of the sauce mixture that's later served with it. The sauce is made from V-8 juice, tomatoes, onions and bell peppers.



Ingredients:

  • SAUCE:
  • 1 small can V-8 (vegetable juice)  
  • 1 can tomatoes, crushed  
  • 1/2 cup EACH of chopped red, yellow, and green peppers
  • 1 medium onion, chopped  
  • 2 tbsp. minced garlic  
  • 1 tsp sugar
  • 1/2 tsp salt  
  • 1/4 tsp. pepper  
  • 1 1/2 lbs EACH of ground chuck and lean ground pork
  • 3 eggs, beaten
  • 1 cup rolled oats (oatmeal)

Method

Preheat oven to 350 degrees. Mix together all ingredients for the sauce. Combine meats, oatmeal, eggs and about HALF of the sauce. Form into a loaf about 4 or 5" wide in a 13x9 pan. Spoon just a little of the sauce over loaf. Bake for 1 to 1 1/4 hours or till done. Remove from oven and let stand. Meanwhile simmer the rest of the sauce for about 10 minutes. Slice the meatloaf and serve with a little sauce spooned over it.
