
This is an easy-to-put-together recipe. Tortillas are filled with a ground beef mixture, topped with cheese and enchilada sauce and baked.
Brown hamburger and onion on medium heat till done. Drain off fat. Add 1/2 cup enchilada sauce and 1/4 cup chopped tomatoes, and 1 cup cheese. Divide mixture evenly and roll up in fajita. Place seam side down in a 13 x 9 inch Pam-sprayed glass dish. Mix remaining sauce and tomatoes together. Pour over enchiladas. Sprinkle remaining cheese over top. Place in 375 degree oven for 20 minutes, or till hot and bubbly. Serve with sour cream.
Notes:
HOMEMADE ENCHiLADA SAUCE:
6 T oil
9 T flour
1 1/2 T red pepper
6 T chili powder
3 tea garlic
3 C water or broth, chicken, beef, or tomato
1 1.2 tea Salt.
In saucepan heat oil add flour, mix well. Take off heat. Add dry ingredients. Add water or broth, return to heat and wisk until thickened.
