Fabulous Vegetable Beef Soup

This quick-to-fix stew gets a jump start with off-the-shelf ingredients such as mushroom soup, celery soup, beef broth, and vegetable juice.
 

Ingredients

  • 1 quart vegetable juice
  • 1 bag frozen mixed vegetables
  • 1 can cream of mushroom soup
  • 1 can cream of celery soup
  • 2 cups shredded cabbage
  • 1 tsp. salt
  • 1 onion, chopped
  • 1 lb. stew meat
  • 2 cups beef broth

Method

Combine all ingredients in a large saucpan. Simmer, covered, for 1 to 2 hours or until meat is tender.

 

Notes: This is a very rich and filling soup. You could also cook it in your crock pot.
