Fancy Beef Stew


This awesome dish looks great served family style and makes a filling meal. Dark beer and Dijon mustard add a great flavor to this traditional dish.



Ingredients:

  • 3 lbs boneless beef chuck or stew beef, cut into cubes
  • 1/4 cup flour
  • 1 tbsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp freshly ground black pepper
  • 6 slices bacon, diced
  • 2 large onions, chopped
  • 2 cups sliced carrots
  • 1 large parsnip, chopped
  • 2 cups dark beer
  • 2 tbsp Dijon mustard
  • 2 tsp sugar
  • 1 tbsp fresh lemon juice
  • Chopped parsley
  • Cooked noodles

Method

Dredge beef in mixture of flour, thyme, salt and pepper, and then set aside. In a Dutch oven, fry bacon over medium high heat until crisp. Remove bacon and drain on paper towels. In same pan, brown a third of beef on all sides, in bacon drippings. Remove to plate and repeat with remaining beef, removing all beef to the plate. In same pan, saute onions until soft. Return beef to pan and add all remaining ingredients except bacon and parsley. Bring to a boil, reduce heat, cover and simmer for 2 hours. Ladle over cooked noodles, sprinkle with bacon and parsley.
